چکیده

The social context of eating has a profound effect on consumption choices. Social modeling, that involves using others’ behavior as guide for appropriate consumption, been well documented food intake, but less is known about modeling Moreover, mainly studied in laboratory settings. We conducted an observational study self-service canteen to examine whether the choices individual were influenced by choice person ahead queue. recorded 546 individuals (333 men and 211 women) those front them queue along linear buffet. Starters sub-categorized into salads, mixed starters (e.g. avocado shrimp mayonnaise), cold meat starters, desserts fruits, dairy products pastries. There was significantly higher probability taking starter general (OR = 1.65, IC 1.06–2.57, p 0.03), salad 1.78, CI 1.08–2.93, 0.02), 2.98, 1.42–6.05, < 0.01), not meat, if also took one compared when did take one. No significant modelling found which may be because almost all participants dessert. These results highlight influences choices, this phenomenon can observed real life setting. data suggest some categories, such could more susceptible than are others. Finally, we both between familiar unfamiliar participants, suggests norms used promote healthier range settings including friendship groups.

Application of Rheological Modeling in Food Emulsions

Various scaling methods such as relative viscosity, Peclet and Reynolds scaling were used to find the best scaling law. Scaling and modeling of the flow curves of various model emulsions consist of Tragacanth Gum (TG) (0.5, 1 % wt), Oleic acid (5, 10% v/v) and WPI (2, 4 % wt) were investigated and the best models were selected. As these emulsions are non-Newtonian, they do not obey the usual...
